As you may know, I had to close my beloved Missouri Jane's Restaurant, about 3 years ago, due to the fact that my Mom had to go on life support, and we brought her home to spend her last days here. Well, what we thought would be only about a month turned into 3 YEARS going strong! Praise the LORD we still have Mama with us, and she is just as fiesty as ever!
So now I have to come up with a new plan for my life! I can't reopen my restaurant, because the owner of the building no longer want to have a restaurant in there. So.....
I BOUGHT AN OLD AIRSTREAM!! And I am going to turn it into a mobile food cart! We are beginning to remodel it and do some repairs. That is our winter project, and I will try to post some before and after photos for you!
This is going to be called MINI JANE"S, and we will only be serving our FAMOUS quesadillas, chips, fresh salsa, and pink lemonade!
I hope that we can have a successful business. I know that it will be a lot of hard work, but I will be up to the challenge!

Well, I am such a great bolgger! I manage one post per year! I will try to do better, this I promise!

I am now following a ketogenic diet, and have made may changes in my life.

Accepting Changes
My life is very different now than it was a year ago. In fact if you would have told me all of the changes that would occur in the coming year I wouldn't have believed it!
It all started in October when I fell in the kitchen of my restaurant-not once but twice!- because once is never enough with me apparently! To make a long story short, I hurt both of my knees and wound up in the emergency room... It all went to hell in a hand basket after that!
Two weeks later my Mom fell, and did not go to the emergency room, so that her injuries developed into pleurisy and she had to be put on life support for 22 days. During which time I lost 5 friends ranging in age from 17 to 80.. It was a tragic time to say the least. How my Mom survived and the others didn't is a miracle. We brought Mom home, thinking it would be our last days with her. I closed my restaurant so that I could care for her 24/7. This was one of the hardest decisions I have ever had to make! I assumed it would be for a short while, but sadly I had to close for good and remove my equipment when the landlord decided to sell the building. I never thought I would leave the place I put my heart and soul into. It was such a struggle to get it off the ground, and finally to be able to see it succeed was a great joy.
I met so many wonderful people, and made some new friends that will last a lifetime!
I lost my two best friends shortly after opening, and it was in my kitchen that I found solace for my loss. When I had to close it was as if I lost them all over again too! I could feel their spirits guiding me every morning when I would get in my kitchen and cook. I miss them. I miss my life.
Luckily Mom is still with us, and it is it a great blessing when so many younger and stronger have not made it.
I have had such a mental, emotional and financial struggle this past year. I am not the same person I was a year ago, I had to let her go. I miss my old self, but I have evolved into a new person, and even found some of the hope and dreams I had as a child beginning to resurface.
I have learned a lot about myself and what makes me happy, and what I really want in the future for my life.
I miss creating beautiful things. That has always made me happy, and I plan on being creative for the rest of my life. My family thinks I am crazy, and they do not understand this pull inside me-they never did. But one thing about growing up, I don't need them to understand or approve any more! I am going to do this for myself. I have to listen to that voice inside my head that I have been suppressing for so long!
I will be an artist, a crafter, a jewelry maker, a baker, a writer, a t shirt maker, and any other little 'ol thing my heart desires!
I invite you to come along for the ride!

Pear Honey, Warm croissants, salted butter, watching Brave with my Best Girl!
This weekend we went to gather apple pears at a Ms. Lawanda's house in Cullman. Her Grandfather, and Father had grafted a pear onto an apple tree, and made the most amazing little globes of juicy fruit I have ever eaten in my life! She let us gather two huge Wallmart bags to take home- it was very difficult because if hey hit the ground they would burst open, because they were so filled with juice! I told her that I wanted to make some pear preserves with the fruit, but she told me that her Grandmother had tried many times, and it always failed because of the moisture content. My sister told me to just make pear honey-so I did! Oh My Goodness! It is so wonderful!
So today Bella and I had a wonderful brunch of warm croissants, salted butter, pear honey, and a fresh pot of tea-while we watched the best Mother /Daughter show of all time-BRAVE!
I wish all Monday's could be so good!
This is how I made the Pear Honey!
Clean pears, and check for spots.
If peel is tough -remove peels-mine were soft so I just cut them up!
Put in a heavy bottom pot- if not it might burn!
Start with two cups of sugar, and about 1/4 cup water- pore over fruit, and start the temp on med. high
As the fruit cooks down it will release the juice
Keep adding about a cup of sugar per hour until it starts to thicken-depends on how much fruit you have and how juicy it is. Taste , and stir often when it starts to resemble the flavor of honey it is done!
I put mine in left over containers and put in fridge- but I might transfer to a freezer container tomorrow.
Enjoy!

Craw Tater Sauce!
My lifelong friend Cris Wright invented a new AMAZING sauce! It's called Craw Tater Sauce! It is to dip your taters in at a crawfish boil-but I have been using it in Everything! This stuff will wake up your taste buds! Missouri Jane's is the first restaurant to serve this amazing sauce, so y'all come on in and try it!!

Well, I made it ONE YEAR!!! What a ride! I will be adding more cooking ideas as I get them, and sharing my journey into food festivals. Any ideas? Please share!
